Ingredients for 2 servings:
- 4 large tomatoes, firm
- 2 thin turkey cutlets
- 3 large garlic cloves
- 4 tsp breadcrumbs
- 4 tsp Parmesan, grated
- 4 tsp olive oil
- some butter
- 1 ball of mozzarella
- basil
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Brush a heatproof glass dish with butter or margarine. Remove the stems from the tomatoes in a funnel shape, season with salt, and place them on kitchen paper with the open side down to drain a little. In a small bowl, mix the breadcrumbs, Parmesan cheese, olive oil, and crushed garlic into a paste. Fill the tomatoes with the paste and press down lightly, then place in the dish. Wash the turkey cutlets, pat dry, and season generously with salt, pepper, and basil. Place two slices of mozzarella on each cutlet and roll them up, secure with a rolling pin, and also place in the dish. Bake everything at 200°C for 20 minutes, then turn the turkey rolls over, turn on the grill, and bake for another 10-15 minutes, until golden brown. Drizzle any juices and mozzarella over the prepared rolls. Baguette or flatbread goes best with this.
