SABO – Potatoes with green bacon sauce

Ingredients for 4 servings:

  • 750 g potatoes, waxy
  • 2 tbsp olive oil
  • 1 bunch of spring onions, in rolls
  • 2 bunch parsley, flat-leaf/chopped
  • 4 sprigs rosemary, chopped
  • 2 chili peppers, green/chopped
  • 1 bunch oregano, chopped
  • 4 cloves garlic, finely chopped
  • 2 tbsp flour
  • 400 ml broth
  • Salt
  • Sugar
  • pepper
  • 350 g bacon, diced

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brush and peel the potatoes, then boil them. Steam the potatoes. Heat the olive oil, fry the bacon, add the next 6 ingredients, and sauté for 3-4 minutes. Dust with flour and add the broth. Bring to a boil, then simmer over low/medium heat for about 14-15 minutes. Season with salt, sugar, and pepper. Serve the potatoes with the bacon and herb sauce.
