Coconut cream croissants

Ingredients for 40 servings:

  • 200 g flour
  • 80 g cornstarch
  • 50 g sugar
  • 5 packs of vanilla sugar
  • 200 g butter
  • 140 g desiccated coconut
  • 1 tbsp baking powder
  • 10 tbsp sweet cream
  • 50 g sugar
  • 4 packets of vanilla sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First, melt the butter. Then, combine the butter, flour, cornstarch, baking powder, sugar, desiccated coconut, and cream into a dough and knead. Let the dough cool for 10 minutes. Shape the marble-sized pieces into small croissants and place them on a greased baking sheet. Bake at 180°C on the middle rack for 20 minutes. During baking, mix the 50g of sugar and the 4 sachets of vanilla sugar well in a bowl. Now, simply toss the finished croissants in the vanilla sugar mixture and set them aside to cool. P.S.: The croissants may still feel soft straight from the oven, but this will change after a short cooling period!
