Mediterranean grilled pork loin

Ingredients for 2 servings:

  • 600 g pork loin(s)
  • 100 g feta cheese
  • n. B. Fresh herbs, e.g. rosemary, thyme and oregano
  • 8 slices of bacon
  • 100 ml maple syrup
  • 1 small onion(s), chopped
  • n. B. Sauce (Jalapeño sauce)
  • e.g. salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 9 hours 40 minutes

Mix the marinade with maple syrup, jalapeño sauce, chopped onions, salt, and pepper. Rinse the pork loin. Then, using a sharp knife, cut a pocket into the loin and fill it with the feta and finely chopped fresh herbs. Seal with a toothpick and marinate in the marinade for about 8 hours. Before grilling, wrap the loin in bacon and secure with toothpicks. Grill the loin over direct heat for a few minutes until browned on all sides. Then remove from direct heat and let it cook over indirect heat (grill with a lid) for about 1 hour. Gently grilling over indirect heat will make the loin beautifully tender.
