Potato goulash with bacon

Ingredients for 4 servings:

  • 250 g bacon, diced
  • 200 g onion(s)
  • 800 g potatoes (peeled)
  • 375 ml vegetable broth
  • 1 tsp salt
  • 1 tbsp paprika powder
  • 1 cup sour cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes and dice them. Finely chop the onions. Fry the bacon and onions in a pan. Add the raw potatoes and stir briefly. Then pour in the vegetable stock. Add salt and paprika. Cover and simmer over medium heat until the potatoes are tender, stirring occasionally. Finally, fold in the sour cream. Serve with ciabatta bread or fresh baguette.
