Ingredients for 4 servings:

  • 1 kg potatoes, cooked, but at least from the previous day or older
  • 350 g flour
  • 1 tsp salt
  • Butter, depending on the dryness of the potatoes

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Graubünden specialty from Switzerland

Peel the potatoes and grate them. Mix with the flour and salt. Place everything in a frying pan and, with a good amount of butter, repeatedly poke them until small balls form. You don’t want the potatoes to be too dry because of the butter, but you don’t want them to be swimming. So add a little butter, poke them in, add more butter, and keep poke-ing, and so on, until you have just small balls. The whole process will probably take about 30 minutes. Serve with applesauce or compote.
