Ingredients for 4 servings:

  • 1 kg beef bones
  • 400 g soup vegetables
  • 1 m.-sized onion(s)
  • 2 garlic cloves
  • some parsley
  • 10 peppercorns

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 6 hours 30 minutes; Total time approx. 6 hours 55 minutes

Strain the bones. Rinse first with hot water, then with cold water until the water runs clear. Place the bones in the pot, cover with water, bring quickly to a boil over high heat, and skim off any foam that rises. Simmer the broth over low heat for 5 to 6 hours. Peel the vegetables, onion, and garlic cloves. Crush the garlic and peppercorns and add everything to the broth 1 hour before serving. Strain the broth through a sieve, skim off the fat from the surface, and let the broth cool.
