  • 125 ml sour cream
  • Cranberries
  • 500 ml soup, clear for pouring
  • Wine, red
  • Spice(s) , in a bag (juniper, peppercorns, bay leaf, rosemary
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Lightly pound the roast beef, season with salt and pepper, and sear briefly in hot fat. Add the thinly sliced ​​root meat, brown it briefly, and pour in the red wine and clear beef broth. Add the spice sachet and simmer the roast beef until soft. Finish with sour cream and cranberries and serve with Waldviertel potato dumplings. The Waldviertel region is located in northwest Lower Austria, bordering the Czech Republic.
