Ingredients for 1 servings:
- 150 g butter, room temperature
- 3 m.-large marigolds, the flowers of which
- 1 tsp parsley, finely chopped
- 1 tsp lemon balm, finely chopped
- salt and pepper
Instructions
Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 43 minutes

Melt one-third of the butter until warm (doughy, not liquid!). Stir in the picked petals. Let the mixture sit at room temperature for about 30 minutes. Add the remaining butter and mix thoroughly. Stir in the parsley and lemon balm and season with salt and pepper. Pour the butter into molds and place them in the freezer. Calendula butter tastes delicious on fresh bread, with boiled or baked potatoes, and with grilled fish and meat.
