Chicken thighs with cherry tomatoes

Ingredients for 2 servings:

  • 2 chicken legs
  • 1 tsp vegetable oil
  • 2 tbsp balsamic vinegar
  • 1 tsp sweet paprika powder
  • 1 tsp brown sugar
  • 250 g cherry tomatoes
  • Thyme
  • pepper
  • basil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the chicken thighs, pat dry, and season with paprika (without salt). Place them on a baking sheet lightly greased with vegetable oil and roast in a preheated oven at 220°C for about 40 minutes. Wash the cherry tomatoes, score them crosswise (season with thyme/basil), and arrange them on the baking sheet with the chicken thighs. Let them cook for the remaining time. Mix the balsamic vinegar with the paprika and brown sugar and brush the chicken thighs with it occasionally during the roasting process. I always use a casserole dish for this recipe instead of a baking sheet, as it catches the sauce better. We always serve it with brown rice.
