Turkey breast fillet with spinach stuffing from the table steamer

Ingredients for 4 servings:

  • 4 turkey breast fillets (approx. 1 kg)
  • 250 g leaf spinach
  • 2 tbsp tzatziki
  • 1 lemon(s), the juice
  • 3 tbsp mustard, Dijon
  • 2 cl white wine
  • 1 pinch of garlic granules
  • Salt
  • pepper

A recipe for the Tefal VS 4001 VitaCuisine

First of all: I use a Tefal VS 4001 VitaCuisine tabletop steamer. Preparation may vary with other models. Cut a pocket into each turkey breast fillet with a sharp knife and season with salt and pepper. Squeeze the lemon, reserving the juice. Mix the spinach with 2 tablespoons of tzatziki and the garlic granules, and season with salt, pepper, and lemon. Then fill the fillets with the spinach mixture and secure with wooden skewers or kitchen string (oiling the skewers beforehand will make them easier to remove after cooking). Place the fillets on the steamer, brush with mustard, and drizzle with lemon juice. If all the fillets won’t fit side by side on the steamer, stack them on top of each other. Pour in the white wine and steam the fillets for between 20 and 30 minutes, depending on their thickness. Cook the remaining tzatziki spinach in the pot and serve as a side dish. Serve with rice or flatbread.
