Zucchini Salad

The perfect zucchini salad recipe with a picture and simple step-by-step instructions.

  • 1 medium sized Zucchini (about 200g)
  • 150 g Strong cheese
  • 3 -4 Stück Pickles or the equivalent amount of gherkins
  • 1 -2 tbsp Capers
  • 4 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Chives and parsley
  • 1 tbsp Salt, pepper and sugar
  1. Wash the zucchini, cut off the ends, cut in half and scrape out the stones with a spoon. Now cut the zucchini into cubes.
  2. Dice the cheese and the cucumber.
  3. Chop the herbs.
  4. Make a strong dressing from oil, lemon juice, salt, pepper and sugar and mix with the salad ingredients.
  5. The salad should definitely go through a bit.

  1. We had focaccia with it. The salad is amazing and incredibly delicious! The two of us didn’t manage everything and so I finished off the rest the next day. Since everything was done really well, the salad was even more delicious.
