Salads: Oriental Carrot Salad

The perfect salads: oriental carrot salad recipe with a picture and simple step-by-step instructions.

  • 800 g Carrots – grate coarsely
  • 1 Garlic clove pressed
  • 1 Piece (2-3cm) Ginger – grate finely
  • 1 Red chilli pepper – finely chopped
  • 1 tsp Turmeric
  • 0,5 tsp Ground cinnamon
  • 0,5 tsp Ground cardamom
  • 1 tsp Maple syrup
  • 0,5 bunch Coriander finely chopped
  • 1 Fresh lime – squeeze juice
  • Salt
  • White milled pepper
  • 3 tbsp Peanut oil
  1. Heat the oil in a pan. Sauté the ginger, garlic, chilli with turmeric, cardamom and cinnamon for about 1 minute. Then stir in the maple syrup vigorously. Add the grated carrots and cook for about 2 minutes.
  2. Then put in a bowl, pour the chopped coriander and the lime juice over it, mix well and season with salt and pepper.
  3. tastes lukewarm and cold, we also had feta cubes with sesame crust (from my KB)
