Ingredients
- 800 g Carrots - grate coarsely
- 1 Garlic clove pressed
- 1 Piece (2-3cm) Ginger - grate finely
- 1 Red chilli pepper - finely chopped
- 1 tsp Turmeric
- 0,5 tsp Ground cinnamon
- 0,5 tsp Ground cardamom
- 1 tsp Maple syrup
- 0,5 bunch Coriander finely chopped
- 1 Fresh lime - squeeze juice
- Salt
- Ground white pepper
- 3 tbsp Peanut oil
Instructions
- Heat the oil in a pan. Sauté the ginger, garlic, chilli with turmeric, cardamom and cinnamon for about 1 minute. Then stir in the maple syrup vigorously. Add the grated carrots and cook for about 2 minutes.
- Then put in a bowl, pour the chopped coriander and the lime juice over it, mix well and season with salt and pepper.
