Salads: Oriental Carrot Salad

Ingredients
 

  • 800 g Carrots - grate coarsely
  • 1 Garlic clove pressed
  • 1 Piece (2-3cm) Ginger - grate finely
  • 1 Red chilli pepper - finely chopped
  • 1 tsp Turmeric
  • 0,5 tsp Ground cinnamon
  • 0,5 tsp Ground cardamom
  • 1 tsp Maple syrup
  • 0,5 bunch Coriander finely chopped
  • 1 Fresh lime - squeeze juice
  • Salt
  • Ground white pepper
  • 3 tbsp Peanut oil

Instructions
 

  • Heat the oil in a pan. Sauté the ginger, garlic, chilli with turmeric, cardamom and cinnamon for about 1 minute. Then stir in the maple syrup vigorously. Add the grated carrots and cook for about 2 minutes.
  • Then put in a bowl, pour the chopped coriander and the lime juice over it, mix well and season with salt and pepper.
  • tastes lukewarm and cold, we also had feta cubes with sesame crust (from my KB)
