Delicious Covered Apple Pie

- 100 g Whole cane sugar
- 1 Pc. Organic lemon
- 1 Pc. Egg
- 250 g Wholemeal spelled flour
- 750 g Apples
- 35 g Whole cane sugar
- 1 tsp Cinnamon
- 50 g Raisins
- First the dough is prepared. To do this, first stir butter and whole cane sugar until frothy, then add lemon zest. Whisk the egg and add half of it at the same time as the flour. It is best to continue kneading with your hands. Depending on the consistency of the dough, add 2 tablespoons of water.
- Pour a little more than half of the batter into a greased springform pan (24 cm diameter) and press it flat, pulling up a small edge. Spread the breadcrumbs on the dough base.
- Next up is the filling. To do this, quarter the apples, cut out the casing, peel and cut into fine slices. Mix whole cane sugar and cinnamon in a bowl. Spread about half of the apple slices in a circle on the cake base, then sprinkle with cinnamon sugar and raisins and also distribute the remaining apples on top.
- Roll out the rest of the dough thinly and cut wavy strips with a ravioli cutter. Spread the strips on the cake in a grid shape. Brush with the rest of the beaten egg. Bake in the preheated oven for about 45 minutes at 180 degrees top / bottom heat (or convection 160 degrees) on the middle rack. The cake tastes best warm.
