Apple Pie with Cinnamon Frosting
The perfect apple pie with cinnamon frosting recipe with a picture and simple step-by-step instructions.
For the dough
- 4 Apples
- 120 ml Sunflower oil
- 100 g Brown sugar
- 2 Eggs
- 1 tbsp Vanilla sugar brown
- 280 g Spelled flour
- 3 tsp Tartar baking powder
- 0,5 tsp Cinnamon
- 1 pinch Salt
- Grated zest of half a lemon
- 1 tbsp Lemon juice
- Egg whites from 2 egg whites
For the frosting
- 300 g Cream cheese
- 100 g Soft butter
- 50 g Brown sugar
- 30 g Coconut blossom sugar
- 1 tsp Cinnamon
For crunch garnish
- 50 g Pecans
- 2 tbsp Sugar
- Quarter the apples, remove the core, peel and cut into fine cubes. Drizzle with lemon juice. Mix the oil with sugar and vanilla sugar, stir in the eggs. Mix the flour, cinnamon, salt and baking powder and gradually stir into the mixture. Fold in apples. Carefully fold in the very stiff whipped egg whites in 2 portions. Fill into a greased springform pan or a silicone mold and bake in a preheated oven at 150 degrees fan for about 50 minutes. Let cool down well.
- For the crunch, lightly caramelize the sugar in a pan and then stir in the chopped nuts. Let cool on baking paper and roughly chop again. For the frosting, mix the softened butter with the sugar and cinnamon (amount depending on your taste) (you can also use brown sugar only). Gradually stir in the cream cheese.
- Cut the cake in half crosswise. Spread some frosting on the lower part (approx. 1 cm high) and put on the upper part. Then coat the cake all around with the frosting. Finally decorate with the chopped nuts. Chill for at least 3 hours. Good Appetite!
