Quark and Orange Noodles

The perfect quark and orange noodles recipe with a picture and simple step-by-step instructions.

Otherwise

  • 0,5 cube Fresh yeast
  • 50 g Sugar
  • 75 ml Lukewarm milk
  • 1 pinch Salt
  • 150 g Lowfat quark
  • 2 Eggs
  • 1 Orange – the abrasion
  • Raw cane sugar
  • Cinnamon
  • Oil
  1. Put the sugar in a bowl and crumble the yeast into it and pour the lukewarm milk over it. Mix everything well until the yeast has dissolved. Now add 3 – 4 tablespoons and stir to make a thick paste. Cover and let rest for 20 minutes.
  2. Put the rest of the flour together with the pinch of salt, the butter, the eggs and the orange zest in a bowl, add the pre-dough and knead everything into an elastic dough. Cover and let rest on a warm dough for about 30 minutes until the volume has doubled.
  3. Now knead the dough again vigorously and then always remove pieces about the size of a walnut, then shape them with lightly floured hands first into a ball and then into finger-thick noodles, place them on a lightly floured kitchen towel and cover again for 30 minutes.
  4. Heat enough oil in a saucepan and then let the noodles slide gently and bake until golden brown – turn occasionally. Mix the raw cane sugar and cinnamon in a shallow bowl. Take the quark noodles out of the pot, degrease them on paper towels and turn them in the cinnamon-sugar mixture while still warm.
