Matcha Biscuits or Cookies

The perfect matcha biscuits or cookies recipe with a picture and simple step-by-step instructions.

  • 1 tsp Matcha powder
  • 1 Pc. Pulp of a vanilla pod
  • 100 g Wholemeal spelled flour
  • 1 tbsp Coconut oil
  • 2 Pc. Egg yolk
  • 35 g Coconut blossom sugar
  • 1 tbsp Pumpkin seed jam
  • 1 tbsp Maple syrup
  • 30 g Butter
  • Rice syrup powder as desired
  1. Knead the specified ingredients into a smooth mass and wrap in foil and leave to cool for about 30 – 60 minutes.
  2. Then roll out thinly on a floured work surface and cut out any shapes. Alternatively, you can make croissants out of it at Christmas time. Place on a baking sheet lined with baking paper and bake in the preheated oven on the middle rack at 180 degrees top / bottom heat for about 10 minutes. (Kipferl take about 12-15 minutes)
  3. After cooling, dust with rice syrup powder as desired (looks like powdered sugar).
