Dessert: Chunky Applesauce with Cinnamon and Vanilla

- 1 kg Tart apples, peeled and pitted
- 25 g Lemon juice
- 50 g Water
- 1 tsp Bourbon vanilla powder
- 1 tbsp Cinnamon
- 40 g Raisins
- Put the apples cut into quarters in the Thermomix and add all the ingredients except the raisins. Simmer for 9 minutes / 100 degrees / level Then chop for 8 seconds on speed 4.
- Then take out 2/3 and puree the rest for 7 seconds at level 7 or 8. Add the removed pieces again and stir in with the raisins at level 4 for approx. 5 seconds in an anti-clockwise direction.
Tips:
- For an apple sauce without pieces, puree everything for about 20 seconds on level 5. Then add raisins if you like. If you like it sweeter, you can stir in 2 tbsp maple syrup, rice syrup or honey. You can also use 1 teaspoon cinnamon and 1 teaspoon gingerbread spice. The applesauce goes well with natural yoghurt, muesli, rice pudding, for baking cakes etc …
- I spread the applesauce on a baking sheet lined with baking paper so that it cools down faster. Then I freeze it in approx. 200 g portions.
- Addendum: I have already made the applesauce a few times with lime juice instead of lemon juice and about 1 teaspoon (slightly heaped) Turmeric Latte Spice from Sonnentor. Tastes great and the purée has a bright yellow color. You can also only use turmeric, but then I would use a maximum of one level teaspoon.
