Playful Dream Made of Chocolate and Sweet Fruits (Belle La Donna)
The perfect playful dream made of chocolate and sweet fruits (belle la donna) recipe with a picture and simple step-by-step instructions.
For the sauce:
- 1 tbsp Olive oil
- 3 Pc. Eggs
- Cocoa
- Couverture
- 1 Pc. Pineapple
- 1 Pc. Mango
- 1 Pc. Orange
- Peaches
- Salt
- Cane sugar
- Pineapple juice
- First make the pasta dough from the flour, eggs and oil.
For the filling:
- Heat the dark couverture and mix 1: 1 with the cream. Let everything cool and then shape into walnut-sized balls. Roll out the pasta dough thinly and cut out circles. Fill the pasta dumplings with the couverture balls and close / press shut at the edge. Bring a large pot of water to the boil and then turn down the switch. Then place the filled pasta pockets in the water bath and let them cook.
For the sauce:
- Let the cane sugar caramelize in a saucepan. Deglaze with orange juice and a dash of pineapple juice. Cook the peaches in a double boiler so that the peel comes off more easily and the pulp becomes soft. Then stir in the peach pulp, stirring constantly. Add a little salt to the whole thing.
- Toss the cooked pasta pockets in the peach fruit sauce and cut the pineapple and mango into slices. Arrange the plates with pineapple and mango slices, as well as pasta pockets and peach sauce.
