Quick Kohlrabi Soup

The perfect quick kohlrabi soup recipe with a picture and simple step-by-step instructions.

  • 1 Kohlrabi tuber
  • 800 Vegetable broth
  • 1 tbsp Sugar
  • Oil
  • 1 Shallot
  • Pumpkin seed oil
  • Pepper, salt, chilli
  1. Put the oil in a saucepan and heat it up. Peel and chop the shallot and sweat as soon as the oil is hot. When they are translucent, sprinkle the sugar over them and let them caramelize.
  2. Peel the kohlrabi, cut into slices and then halve and add to the onions together with 3 of the kohlrabi leaves. Fry well and then deglaze with the stock and simmer for about 20 minutes until the vegetables are soft.
  3. When the vegetables are soft, use the hand blender to puree the soup and season with salt and pepper. If necessary, you can add chilli for a little spiciness.
  4. Fill the soup into plates and add a few drops of pumpkin seed oil. Looks nice and tastes good
