Wild Garlic Cucumber Salad
The perfect wild garlic cucumber salad recipe with a picture and simple step-by-step instructions.
- 1 small Cucumber
- 12 Wild garlic leaves
- 1 Diced shallot
- 2 tablespoon Cucumber water
- 2 tablespoon Olive oil fruity
- 0,5 tablespoon Freshly squeezed lemon juice
- 2 tablespoon Ricotta double cream setting
- 2 Pinches Sugar brown raw sugar
- Green pepper from the mill
- Salt
- Peel the cucumber and slice it. Put the cucumber slices in a sieve, sprinkle with a pinch of salt and let them drain for about 1 hour. Set aside two tablespoons of cucumber water.
- Wash the wild garlic, spin dry and cut into strips and add to the drained cucumber slices with the chopped shallot and mix.
- For the dressing, whisk the olive oil, cucumber water and lemon juice. Stir in the ricotta and season with salt, pepper and sugar.
- Pour the dressing over the salad.
