Light, Hearty Vegetable Muffins
The perfect light, hearty vegetable muffins recipe with a picture and simple step-by-step instructions.
- 2 pcs Eggs
- 70 ml Milk
- 60 g Flour
- Salt
- Pepper
- 250 g Vegetables or ingredients of your choice
- Preheat the oven to 190 degrees upper and lower heat. Beat egg, milk, flour and spices until frothy.
- Cut vegetables / desired ingredients very small (so that it cooks quickly) and fold into the egg mixture.
- Spread in greased muffin tins (fill it up, the dough hardly rises) and bake at 190 degrees for about 30 minutes.
- 4th TIP: if you omit milk and flour it is even healthier and a perfect dinner 😉
