Light, Hearty Vegetable Muffins

The perfect light, hearty vegetable muffins recipe with a picture and simple step-by-step instructions.

  • 2 pcs Eggs
  • 70 ml Milk
  • 60 g Flour
  • Salt
  • Pepper
  • 250 g Vegetables or ingredients of your choice
  1. Preheat the oven to 190 degrees upper and lower heat. Beat egg, milk, flour and spices until frothy.
  2. Cut vegetables / desired ingredients very small (so that it cooks quickly) and fold into the egg mixture.
  3. Spread in greased muffin tins (fill it up, the dough hardly rises) and bake at 190 degrees for about 30 minutes.
  4. 4th TIP: if you omit milk and flour it is even healthier and a perfect dinner 😉
