Christmas Cookies: Crumbly Vanilla Crescents

- 100 g Sugar
- 1 packet Vanilla sugar
- 100 g Peeled ground almonds
- 180 g Butter in flakes
- 2 Pc. Egg yolk
- 2 packet Vanilla sugar
- 3 tbsp Sugar
- The dough is prepared in no time. Knead the flour, sugar, vanilla sugar, ground almonds, butter and egg yolks into a smooth dough. Wrap in foil and put in the fridge for approx. 2 hours.
- Divide the dough into pieces about the size of a walnut and roll them into small rolls between the palms of the hands and then into the typical croissant shape. Place them next to each other on a baking sheet lined with baking paper.
- Bake in the preheated oven on the middle shelf at 180 degrees top / bottom heat for about 10 – 13 minutes until golden yellow. Then pull the baking paper onto a surface. Carefully roll the still hot / warm croissants in the vanilla and sugar mixture. Then let it cool down. The croissants taste best after a few days of rest.
