Christmas Cookies: Crumbly Vanilla Crescents

  • 100 g Sugar
  • 1 packet Vanilla sugar
  • 100 g Peeled ground almonds
  • 180 g Butter in flakes
  • 2 Pc. Egg yolk
  • 2 packet Vanilla sugar
  • 3 tbsp Sugar
  1. The dough is prepared in no time. Knead the flour, sugar, vanilla sugar, ground almonds, butter and egg yolks into a smooth dough. Wrap in foil and put in the fridge for approx. 2 hours.
  2. Divide the dough into pieces about the size of a walnut and roll them into small rolls between the palms of the hands and then into the typical croissant shape. Place them next to each other on a baking sheet lined with baking paper.
  3. Bake in the preheated oven on the middle shelf at 180 degrees top / bottom heat for about 10 – 13 minutes until golden yellow. Then pull the baking paper onto a surface. Carefully roll the still hot / warm croissants in the vanilla and sugar mixture. Then let it cool down. The croissants taste best after a few days of rest.
