- 5 Eggs
- 2 tablespoon Soda
- 200 g Meat sausage
- 2 Onions
- 2 Gherkins
- 1 Spring onion
- Pepper and salt
- 1 Cuffs Chopped parsley
- 1 tablespoon Ham cubes
- 6 Jacket potatoes from the previous day
- 30 g Butter
- Dice the meat sausage and onions, cut the cucumber and spring onion into small slices. Beat the eggs in a vessel, thoroughly beat the cucumber, meat sausage, spring onion and half of the diced onions, sparkling water, pepper, salt and part of the parsley with the eggs and set aside.
- Peel and slice the potatoes. Fry the diced ham in a large, dry pan, lift out of the pan onto a plate and set aside. The leaked fat stays in the pan. Put the potato slices with the remaining onions in the pan, season with pepper and salt and fry everything like fried potatoes until mild and golden.
- When everything has turned golden yellow, pour in the sticky egg mixture. Fry over a mild heat, turning, until the egg has set but is still a little juicy. Fold in the diced ham, the remaining parsley and the butter in pieces and turn off the heat.
