Delicious Meatballs with Mediterranean Potato Salad

- 500 g Minced meat
- 2 Eggs
- 8 Potatoes
- 1 pack Olives
- 1 pack Sun-Dried tomatoes
- 1 pack Mozarella balls
- 2 Discs Toast
- 100 ml Milk
- 1 Spring onion
- First the potatoes need to be cooked. To do this, simply add a little salt to the water and cook the potatoes until soft.
- In parallel we prepare the meatballs. To do this, cut the toast into cubes and add some milk in a bowl so that the toast can soak up. Season the minced meat with salt and pepper and then mix well with the soaked toast and the two eggs. Tip: Shape the meatball balls with slightly moistened hands so that the minced meat does not stick to the hands. Then press a mozzarella ball into each meatball blank and enclose it with the meat. Brown the balls in a pan with olive oil. The roast fat can then be drizzled over the finished meatballs.
- Peel and cut the potatoes and place in a bowl with the previously halved olives. Chop the sun-dried tomatoes and spring onions and add to the potatoes. Then mix everything well, season and add a dash of olive oil. The Mediterranean potato salad is ready, let it taste for you!
