Florentine Bean Soup

The perfect florentine bean soup recipe with a picture and simple step-by-step instructions.

  • 300 g White beans (small variety)
  • 1 l Chicken broth
  • 500 ml Water
  • 2 Onions
  • 2 Garlic cloves
  • 1 Carrot
  • 1 pole Leek
  • 2 Celeriac
  • 1 Red chilli pepper
  • 100 ml Olive oil
  • 4 Discs Toast
  • 40 g Freshly grated Parmesan
  • Salt pepper
  1. Soak the beans overnight in plenty of cold water and let them swell. The next morning, pour off the water, put the beans in an appropriately sized container and pour the chicken broth and the additional 500 ml of water on top. Let them steep until they are used.
  2. First peel only one onion and one clove of garlic. Finely dice the onion and finely chop the clove of garlic. Wash, clean and dice the carrot, leek and celery.
  3. Pluck the rosemary leaves from the stem, chop finely. Wash, core and finely chop the chilli pepper.
  4. Heat 2 tablespoons of olive oil in a larger saucepan. Sweat the onion, garlic, carrot, leek and celery in it. A little later add the rosemary and chilli pepper and stew briefly while stirring.
  5. Then pour all the liquid in the beans, stir everything well and cook covered at medium temperature until the beans are soft. Can take 1 hour.
  6. Meanwhile, peel the 2nd onion and garlic clove. Cut the onion into rings, prepare. Put the garlic clove through the press and stir into the 100 ml olive oil. Preheat the oven to 200 ° (convection 180 °)
  7. Now cut the bean soup in half. Put one half in an ovenproof saucepan, puree the other half and put the other half back into the saucepan. Pour in half of the garlic-oil mixture and stir everything well.
  8. Cover the slices of white bread with the other half of the garlic-oil mixture, sprinkle half of the grated Parmesan on top. Spread the onion rings on top and sprinkle with the rest of the Parmesan again.
  9. Place slices of bread on top of the soup and put the pot in the oven for approx. 20 minutes. Gratinated cross and then serve with the bread. Also take the slightly soaked bread in the middle with you. Just delicious. …….. and …….. autumn can come.
  10. Vegetarians can use vegetable broth instead of chicken broth and vegan cheese instead of Parmesan.
