Ingredients
- 1 tbsp Oil
- 400 g Smoked bacon mixed in one piece
- 0,5 Onion
- 0,5 Coarse pepper
- 1 packet Soup vegetables
- 1 large Diced potato
- 2 Lovage twigs chopped
- 1 tbsp Extra virgin olive oil
- 2 Onions
- 1 Chinese garlic
- 1 tbsp Tomato paste
- 1 can Strained tomatoes
- 1 heaped teaspoon Sweet paprika
- 1 tsp Chilli flakes
- 70 g Diced salami
- 1 can Beans white ripe canned
Instructions
- Heat the oil in a saucepan and briefly fry the bacon with half an onion and a little coarse pepper, add the boiling water and cook the meat covered for about an hour over a mild heat.
- In the meantime, clean the potatoes, soup vegetables, onions and garlic and chop them up to suit the soup. Also dice the salami and put the canned beans in a sieve and rinse with clear water.
- Heat the olive oil in a large saucepan and first fry the onion cubes in it until translucent. Add the soup vegetables and sauté as well. Move the vegetables a little to the side and let the tomato paste with garlic and salami sizzle briefly, then immediately deglaze with the tomatoes.
- Add the potatoes, lovage, sweet paprika and chilli flakes and fill up with the broth from the cooked bacon until everything is well covered. Simmer for about 10 minutes, then add the drained beans and cook for another 15 minutes.
- The soup can be diluted with a little meat stock. Some like it stew-like a little thicker, and some prefer it a little more liquid. In any case, serve sprinkled with chopped parsley.
