Cheese Roll with Zucchini Nuts
The perfect cheese roll with zucchini nuts recipe with a picture and simple step-by-step instructions.
- 120 g Shepherd’S cheese
- 1 tbsp Olive oil
- 0,5 tl Thyme
- 1 tsp Dried basil
- 0,5 tsp Paprika powder
- 2 leaf Iceberg lettuce
- 80 g Cucumber
- 50 g Zucchini
- 50 g Cocktail tomatoes
- 1 tl Herbs of Provence
- 125 g Mozzarella
- 1 pinch Salt
- 1 pinch Pepper
- 1 pinch Rosemary
- 2 tbsp Olive oil
- Crumble the shepherd’s cheese with a fork.
- Cut the cucumber into small pieces and add.
- Add 1 tablespoons of oil and spices and mix.
- Pour the mixture into both lettuce leaves and roll up.
- Preheat the oven to 180 degrees.
- 4 Build small “beds” out of aluminum foil.
- Place zucchini slices inside.
- Cut the mozzarella into 4 slices and place on top.
- Halve the cocktail tomatoes and place 2 pieces on top of the mozzarella.
- Mix 2 tablespoons of oil with the spices and let drizzle over the 4 “beds”.
- Bake for 10 minutes. (this variant is also great for the grill)
- Take out of the “bed” and serve on the plate.
