Cheese Roll with Zucchini Nuts

The perfect cheese roll with zucchini nuts recipe with a picture and simple step-by-step instructions.

  • 120 g Shepherd’S cheese
  • 1 tbsp Olive oil
  • 0,5 tl Thyme
  • 1 tsp Dried basil
  • 0,5 tsp Paprika powder
  • 2 leaf Iceberg lettuce
  • 80 g Cucumber
  • 50 g Zucchini
  • 50 g Cocktail tomatoes
  • 1 tl Herbs of Provence
  • 125 g Mozzarella
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 pinch Rosemary
  • 2 tbsp Olive oil
  1. Crumble the shepherd’s cheese with a fork.
  2. Cut the cucumber into small pieces and add.
  3. Add 1 tablespoons of oil and spices and mix.
  4. Pour the mixture into both lettuce leaves and roll up.
  5. Preheat the oven to 180 degrees.
  6. 4 Build small “beds” out of aluminum foil.
  7. Place zucchini slices inside.
  8. Cut the mozzarella into 4 slices and place on top.
  9. Halve the cocktail tomatoes and place 2 pieces on top of the mozzarella.
  10. Mix 2 tablespoons of oil with the spices and let drizzle over the 4 “beds”.
  11. Bake for 10 minutes. (this variant is also great for the grill)
  12. Take out of the “bed” and serve on the plate.
