Cherry Oatmeal Cake

The perfect cherry oatmeal cake recipe with a picture and simple step-by-step instructions.

  • For the dough:
  • 200 g Flour
  • 0,5 packet Baking powder
  • 300 g Soft butter
  • 250 g Fine oatmeal
  • 150 g Sugar white
  • 1 tablespoon Vanilla sugar
  • 4 Free range eggs
  • 1 packet Lemon zest
  • For covering:
  • 1 Glass Morello cherries
  • 5 tablespoon Crunchy oatmeal
  • 50 g Sugar white
  1. Pour the morello cherries into a sieve and drain well.
  2. In a mixing bowl, beat the butter, sugar and vanilla sugar until frothy. Gradually stir in the eggs well. Add the lemon zest and stir in.
  3. Mix the flour with the baking powder and the fine oat flakes and stir in two portions. Pour the dough into the prepared pan and smooth it out.
  4. Spread the drained morello cherries on the dough. Mix the hearty oat flakes with the sugar and spread over the cherries.
  5. Now place the cake in the oven preheated to 200 degrees (convection) and bake for approx. 45 – 50 minutes. After baking, take it out of the oven and let it cool down in the pan.
