Kohlrabi Soup with Sesame Garnish
The perfect kohlrabi soup with sesame garnish recipe with a picture and simple step-by-step instructions.
- 500 g Kohlrabi
- 200 g Potato
- 1 piece Onion
- 1 tbsp Rapeseed oil
- 750 ml Vegetable broth
- 50 g Sour cream
- 1 tsp Lemon juice
- Salt, pepper, nutmeg
- 1 piece Ginger
- 0,5 bunch Parsley
- 2 tbsp Sesame
- Peel and dice the kohlrabi, potatoes and onion. Mix the vegetable stock. Sauté the onion in the hot oil for approx. 2 minutes, then add the kohlrabi and potatoes, sauté briefly and add the vegetable stock. Let everything simmer for 20 minutes, stirring occasionally.
- Peel and finely chop ginger. Rinse the parsley, shake dry and finely chop the leaves. Roast the sesame seeds and mix with a pinch of salt, ginger and parsley.
- Stir in the sour cream, puree the soup and season with lemon juice and the spices. Pour soup into plates and serve sprinkled with the garnish.
