Kohlrabi Stuffed with Minced Meat on Beetroot – Spaghetti

for the stuffed kohlrabi

  • 2 piece Kohlrabi fresh
  • 50 g Leek
  • 1 tbsp Vegetable oil
  • 100 g Mixed minced meat
  • 1 piece Clove of garlic
  • 0,5 tsp Sweet paprika powder
  • 1 tbsp Finely chopped parsley
  • 30 g Grated cheese
  • Salt and pepper

for the beetroot spaghetti

  • 160 g Spaghetti
  • 1 piece Onion
  • 1 tbsp Butter
  • 150 g Boiled beetroot
  • 100 ml Cream
  • 100 ml Milk
  • 1 tbsp Cream of horseradish
  • Salt and pepper

Preparation of the stuffed kohlrabi

  1. Peel the kohlrabi, cut off the bottom and top and cook in salted boiling water for 20 minutes. The kohlrabi should only be just cooked so that they don’t disintegrate when hollowed out.
  2. Lift out of the hot water with a slotted spoon, place in a sieve and allow to drain. Then hollow it out with a ball cutter or teaspoon. Chop the inside into small pieces.
  3. Clean the leek and cut into small pieces. Heat vegetable oil in a pan and fry the leek pieces and minced meat only lightly. Add the finely chopped clove of garlic, diced kohlrabi and half a teaspoon of paprika powder. Season with salt and pepper. Mix everything well and fill the kohlrabi with it.
  4. Sprinkle the stuffed kohlrabi with grated cheese and place in a buttered baking dish. Pour in 70 ml of kohlrabi boiling water and cook in the preheated oven at 180 degrees for 20 minutes.

Preparing the beetroot spaghetti

  1. Cook the spaghetti in plenty of salted water until stretched, strain and drain well.
  2. Cut the sliced ​​and pre-cooked beetroot into small pieces (use gloves – it stains a lot).
  3. Peel, wash and dice the onion. Melt the butter in a pan and fry the onion cubes in it. Add the beetroot and fry briefly.
  4. Mix the milk, cream and cream horseradish (to taste), pour over and bring to the boil. Mix in the spaghetti and season with salt and pepper.

Serving

  1. Spread the beetroot spaghetti on preheated plates, place the stuffed kohlrabi on top, garnish with parsley and enjoy. A small green salad rounds off the taste.
