Tiropitákia – Greek Cheese Triangles

- 4 leaves Filo pastry
- 100 g Sheep cheese
- 50 g Gruyere; Originally: Kasar cheese
- 1 tsp Parsley
- 1 tsp Dill
- 1 Egg
- 1 tbsp Olive oil
- Pepper from the grinder
- Cayenne pepper
- 70 g Butter
- 4 tbsp Milk
- Grate the Greerzer, chop the sheep’s cheese and chop the herbs. Mix the egg, oil, both types of cheese, spices and herbs together.
- Preheat the oven to 200 ° C.
- Place 2 sheets of pastry on top of each other on the worktop. Mix the butter with the milk and brush the dough with it. Cut the filo pastry sheets into approximately 7×20 cm strips. Put a teaspoon of the filling on each end. Fold over to form a triangle. Fold into a triangle again and again until the strip of dough is at the end. Brush the triangles again from above with the butter-milk mixture. Place triangles on a parchment-lined baking sheet. Bake in the hot oven for 10–12 minutes until golden brown. Remove. Taste warm and cold.
