- 125 g Fresh plums
- 1 tablespoon Brown sugar
- 50 Milliliters Dry red wine
- 50 Milliliters Milk
- 50 g Whipped cream
- 1 Egg yolk
- 3 teaspoon Honey liquid
- Mint fresh
- Wash the plums, dry them, remove the stones and cut them into small pieces. Caramelize the sugar in a pan. Pour in red wine and stir until the sugar has dissolved. Add the plums. Let simmer gently for 2 minutes. Take off the stove. Let cool down.
- Heat the milk and cream in a bowl over a hot water bath. Stir in the egg yolks and honey one after the other. Remove from the water bath and beat until frothy.
- Divide the plums in two dessert glasses. Put the honey and milk foam on top and serve immediately. Garnish with mint.
