Chocolate Apple Cake with Crispy Top

The perfect chocolate apple cake with crispy top recipe with a picture and simple step-by-step instructions.

Dough:

  • 3 Eggs
  • 300 g Sugar
  • 2 Pck. Vanilla sugar
  • 1 tube Taste of rum
  • 250 g Flour
  • 50 g Food starch
  • 1 Pck. Baking powder
  • 70 g Ground hazelnuts
  • 50 g Cocoa
  • 160 g Sour cream
  • 50 ml Cream or whole milk

Crispy blanket:

  • 130 g Butter
  • 170 g Sugar
  • 170 g Flour
  • 60 g Almond leaves

alternatively, if little fat is to be used:

  • Powdered sugar

Preparation:

  1. Peel and core the apples, cut into large pieces and store in lightly salted or citronized water so that they do not turn brown until they are used.
  1. Cake pan – whether rectangular or round – grease the edge and line the base with baking paper.
  1. Preheat the oven to 190 °.

Dough:

  1. Beat eggs, sugar, vanilla sugar and rum flavor to a whitish-creamy mass. This takes about 3 minutes.
  1. Mix the flour, cornstarch, baking powder, hazelnuts and cocoa in a separate bowl.
  1. Now stir alternately sour cream and flour mixture vigorously into the egg cream. If the mass is not creamy enough at the end (it looks a bit “dull” then), stir in the cream (or milk) and it has the right consistency and is slightly shiny. It depends a little on how big the eggs were, but that’s how you can ultimately make up for it.
  1. Now put the apple pieces into the finished dough and fold in evenly. Fill into the mold and first in the oven for 15-20 minutes.

Crispy blanket:

  1. Put the butter, sugar and flour in a bowl and stir with the hand mixer until small sprinkles are formed. Fold in the flaked almonds.
  1. Take the cake out of the oven for a moment – the surface must still be shiny – and sprinkle the crumble over it. Put them back in the oven and finish baking about 30 or 25. The total baking time should be 45 minutes and no more dough sticking to the wooden stick test.

alternatively:

  1. If the butter in the crumble is too much for you, you can simply leave out the kusper blanket and simply dust the finished cake with powdered sugar.
