Turkey Breast A`la Saltimbocca
The perfect turkey breast a`la saltimbocca recipe with a picture and simple step-by-step instructions.
- 3 Turkey breast fillet
- 6 Discs Parma ham
- 200 g Tagliatelle
- 50 g Dried tomatoes in oil
- 2 tbsp Oil
- 1 little red Chilli pepper
- 1 Onion
- 1 tbsp Tomato paste
- 1 tsp Sugar
- 6 Sage leaves
- Salt pepper
- Plate the turkey breast fillet and season with salt and pepper.
- Place 2 sage leaves on the meat and wrap 2 slices of Parma ham.
- Heat 2 tablespoons of oil in a pan and sear the meat on both sides for about 2 minutes.
- Then keep the meat warm in the preheated oven at 80 °.
- Cook ribbon noodles in plenty of salted water until they are firm to the bite.
- In the meantime, peel and finely dice the onion.
- Halve the chilli pepper, remove the seeds and dice finely.
- Chop the dried tomatoes too.
- Sweat the chili and onion cubes and the sliced tomatoes in a pan with hot oil.
- Then add 1 tablespoon of tomato paste and 1 teaspoon of sugar and roast briefly.
- Deglaze the whole thing with 100 ml of pasta water and simmer for about 3 minutes.
- Season to taste with salt and pepper.
- Drain the ribbon noodles and toss in the sauce.
- Arrange turkey breast a`la Saltimbocca with ribbon noodles on plates.
