Turkey Breast A`la Saltimbocca

  • 3 Turkey breast fillet
  • 6 Discs Parma ham
  • 200 g Tagliatelle
  • 50 g Dried tomatoes in oil
  • 2 tbsp Oil
  • 1 little red Chilli pepper
  • 1 Onion
  • 1 tbsp Tomato paste
  • 1 tsp Sugar
  • 6 Sage leaves
  • Salt pepper
  1. Plate the turkey breast fillet and season with salt and pepper.
  2. Place 2 sage leaves on the meat and wrap 2 slices of Parma ham.
  3. Heat 2 tablespoons of oil in a pan and sear the meat on both sides for about 2 minutes.
  4. Then keep the meat warm in the preheated oven at 80 °.
  5. Cook ribbon noodles in plenty of salted water until they are firm to the bite.
  6. In the meantime, peel and finely dice the onion.
  7. Halve the chilli pepper, remove the seeds and dice finely.
