- 5 Pc. Eggs
- 200 g Sugar
- 3 El Hot water
- 130 g Food starch
- 40 g Flour
- 30 g Cocoa
- 2 Tl. Baking powder
- Separate the eggs, beat the egg whites with the sugar until stiff, add the hot water and egg yolks, whip everything for a long time (approx. 2-3 minutes). Volume doubles, then mix cornstarch, flour, cocoa and baking powder, sieve and fold in. Bake in a preheated oven at 170 ° for about 30 minutes. Tip: To prevent the base from collapsing, after baking, turn the pan onto a wire rack lined with a kitchen towel and leave to stand for at least 6 hours. Then remove from the mold and divide as desired.
