Zucchini Noodle Casserole

The perfect zucchini noodle casserole recipe with a picture and simple step-by-step instructions.

  • 250 g Mini penne with zucchini spinach flavor
  • 2 Zucchini
  • 1 Can Chunky tomatoes
  • Salt
  • Pepper
  • 200 g Turkey breast slices
  • 200 g Mozzarella
  • 200 g Parmesan
  1. Cook the spaghetti according to the instructions on the packet.
  2. Wash the zucchini, cut into cubes and fry in a pan with hot oil until golden.
  3. Add the chunky tomatoes, season with salt and pepper
  4. Dice the mozarella, cut into strips.
  5. Drain the pasta and add to the vegetable mixture, stir well and season again to taste.
  6. Grease a casserole dish, add half of the vegetable noodles and top it with half of the mozzarella and cold cuts.
  7. Now place the other half of the vegetable noodles, mozzarella and cold cuts on top, sprinkle with grated Parmesan and put it in the warm oven for about 15 minutes
  8. Take the casserole out of the oven, let it rest a little and then put a piece on a plate with a little basil and enjoy – Bon appetit;
