- Make a shortcrust pastry from the flour, butter, sugar and the egg and refrigerate. I take stevia (sugar substitute) instead of sugar. The information differs depending on the brand and composition and must be added accordingly. Bring most of the juice to a boil. Mix the custard powder with the small portion and a little sugar or stevia. Until the juice boils, peel the apples and cut them into pieces of any size. This is added to the pudding mixture. I love adding tipsy (rum-pickled raisins). If the cake is intended for adults, add a little Cointreau or sherry to the pudding mixture. In the meantime, grease a springform pan and line it with the rolled-out shortcrust pastry and pull it up on the edge. Pour the apple pudding mixture into the mold. Bake on the 1st rail at 175 ° top and bottom heat. Let the cake cool for at least 2 hours. Then you can whip a cup of cream until stiff and spread it directly on top or serve separately.
