Vegetable Feta Skewers with Yogurt Dip
The perfect vegetable feta skewers with yogurt dip recipe with a picture and simple step-by-step instructions.
- 200 g Long grain rice
- 2 Pc. Zucchini
- 1 Pc. Red pepper
- 1 Pc. Yellow pepper
- 200 g Sheep cheese
- 1 Pc. Fresh lime
- 0,5 bunch Parsely
- Thyme
- Salt
- Pepper
- Olive oil
- Cook the rice according to the instructions on the package
- Wash and clean the zucchini and peppers. Cut the zucchini into slices and the paprika into pieces about 2 * 2cm in size. Also cut the feta cheese into pieces about 2 * 2cm in size and stick them alternately with the vegetable pieces on skewers. Brush the vegetable skewers with 1 tablespoon of oil. Season with salt and pepper.
- Heat the oil in a pan, fry the skewers all around over a low heat for about 10 minutes.
- Pluck the parsley from the stem and chop. Mix with 250 g yogurt, lime juice, salt and pepper.
- Arrange the skewers with rice and the yoghurt dip and serve.
