Vegetable Feta Skewers with Yogurt Dip

The perfect vegetable feta skewers with yogurt dip recipe with a picture and simple step-by-step instructions.

  • 200 g Long grain rice
  • 2 Pc. Zucchini
  • 1 Pc. Red pepper
  • 1 Pc. Yellow pepper
  • 200 g Sheep cheese
  • 1 Pc. Fresh lime
  • 0,5 bunch Parsely
  • Thyme
  • Salt
  • Pepper
  • Olive oil
  1. Cook the rice according to the instructions on the package
  2. Wash and clean the zucchini and peppers. Cut the zucchini into slices and the paprika into pieces about 2 * 2cm in size. Also cut the feta cheese into pieces about 2 * 2cm in size and stick them alternately with the vegetable pieces on skewers. Brush the vegetable skewers with 1 tablespoon of oil. Season with salt and pepper.
  3. Heat the oil in a pan, fry the skewers all around over a low heat for about 10 minutes.
  4. Pluck the parsley from the stem and chop. Mix with 250 g yogurt, lime juice, salt and pepper.
  5. Arrange the skewers with rice and the yoghurt dip and serve.
