Quark Cake with Crispy Chocolate-nut Crumble

The perfect quark cake with crispy chocolate-nut crumble recipe with a picture and simple step-by-step instructions.

Shortcrust:

  • 150 g Spelled flour
  • 1 Egg
  • 80 g Lätta with yoghurt or butter + something for the pan
  • 40 g Brown sugar

Covering:

  • 3 Eggs
  • 150 g Powdered sugar
  • 1 tbsp Lemon juice
  • 1 Pck. Cream pudding
  • 250 g Lowfat quark
  • 250 g Mascarpone + a little salt

Streusel:

  • 125 g Spelled flour
  • 3 tsp Cocoa powder
  • 25 g Ground almonds
  • 100 g Brown sugar
  • 100 g Lätta with yogurt or butter

Floor:

  1. Knead the flour, sugar, egg and patty into a shortcrust pastry! Line a greased mold with it. Without a border!

Filling:

  1. Separate eggs. Mix together egg yolks, powdered sugar, lemon juice and custard powder. Then add the quark and mascarpone and stir until creamy! Beat egg whites with a little salt until stiff and fold into the quark mixture. Pour the mixture onto the prepared shortcrust pastry. PRE HEAT THE OVEN TO 180 DEGREES CtbspCIUS!

Streusel:

  1. Mix the flour, cocoa powder, almonds and sugar. Add butter and knead until you get nice crumble! Then sprinkle over the curd mass!
  2. Bake the cake for about 45 minutes.
