Apple Crumble Cake with Quark Filling

Ingredients
 

  • Quark-Oil dough
  • 300 g Sifted flour
  • 2,5 tsp Baking powder
  • 1 Egg
  • 150 g Quark
  • 100 g Sugar
  • 6 tbsp Oil
  • 6 tbsp Cream
  • Grease for the tin
  • Filling:
  • 1 kg Quark
  • 6 Eggs
  • 2 packet Custard powder
  • Zest of one lemon
  • 240 g Sugar
  • 1 kg Apples, prefer Boskoop
  • Juice of one lemon
  • Streusel:
  • 150 g Flour
  • 100 g Butter
  • 100 g Sugar
  • 50 g Chopped almonds

Instructions
 

  • Preheat the oven to 180 degrees (convection 160 degrees) and grease a baking sheet.
  • Put the sifted flour with baking powder, egg, quark and sugar in a bowl.
  • Add the oil and cream and quickly knead the ingredients into a smooth and compact dough.
  • Roll out the dough and place on a baking sheet, then prick several times with a fork.
  • For the quark masses, stir the quark with the eggs, pudding powder, lemon zest and sugar in a bowl until frothy and pour onto the dough and smooth out.
  • Peel and core the apples and cut into wedges. Drizzle the wedges with the lemon juice. Then place on the quark mixture.
  • For the crumble: Process the flour, butter, sugar and chopped almond into crumble and sprinkle on the quark mixture.
  • Bake the cake in the preheated oven for 40-45 minutes and then let it cool down. Delicious !
  • If you like, you can sprinkle with powdered sugar and serve with cream.
