Egg in Nest

The perfect egg in nest recipe with a picture and simple step-by-step instructions.

  • 250 g Frozen spinach
  • 1 piece Chopped onion
  • 2 tablespoon Processed Gouda cheese
  • Nutmeg
  • Salt
  • Pepper
  • 100 Milliliters Vegetable broth
  • 300 g Floury potatoes
  • 50 Milliliters Milk lukewarm
  • Nutmeg
  • 1 tablespoon Butter
  • 3 piece Chicken eggs fresh
  • 1000 Milliliters Water
  • 50 Milliliters Vinegar
  • 1 teaspoon Salt

The preparation

  1. Peel, wash and cook the potatoes.
  2. Let the spinach thaw.

Completion

  1. Boil the potatoes. Sweat the onion in a little butter. Add the defrosted spinach and simmer gently. Season to taste with salt, pepper and nutmeg. Pour in some broth.
  2. When the potatoes are cooked, drain them and keep them warm.
  3. Bring the water with the vinegar and salt to a boil in a saucepan. Then turn it down so far that the water only simmers.
  4. Slowly slide the egg out of the shell into a ladle. The egg yolk should stay intact. Let the ladle slowly slide into the vinegar water. Now let it cook to your own taste. I take about 4 minutes ~ soft egg.
  5. In these 4 minutes prepare the mashed potatoes and add the processed cheese to the spinach. Stir, done.
