Tomato Jelly with Marinated Prawns and Tequila Mayonnaise

The perfect tomato jelly with marinated prawns and tequila mayonnaise recipe with a picture and simple step-by-step instructions.

For the tomato jelly:

  • 1 liter Tomato juice
  • 15 g Gelatin
  • 80 ml Sherry
  • 2 Pc. Parsley stalks
  • 1 Pc. Onion
  • 1 Pc. Celery stalk
  • Salt and pepper

Prawns and Tequila Mayonnaise:

  • 10 Pc. Fresh prawns
  • 200 ml Oil
  • Salt and pepper
  • 1 shot Soy sauce
  • 200 g Mayonnaise
  • 4 cl Tequila

Tomato jelly:

  1. Let the gelatine soak in the sherry according to the instructions. In the meantime bring the tomato juice with all the ingredients to the boil and simmer for about 5 minutes so that the tomato juice takes on the taste. Season to taste again and again and, if necessary, spice up. Pour the contents of the pot through a sieve and squeeze out to extract all the juice. Throw away the contents of the sieve and then stir the gelatin into the liquid and stir at a moderate temperature until the gelatin is dissolved. Do not let it boil! Then take the pot off the stove and put it in a mold and put it in the fridge for several hours until the liquid has solidified.

Prawns and Tequila Mayonnaise:

  1. Put the prawns 2 hours beforehand in oil, salt, pepper, a little soy sauce and then fry them in hot oil. Finally, stir the tequila into the mayonnaise, depending on your taste.
