Hack Noodle Nests À La Heiko

- 300 g Minced meat
- 250 g Ribbon noodle
- 1 Onion
- 2 Garlic cloves
- 1 pole Leek
- 400 g Carrots
- 250 ml Milk
- 250 ml Vegetable broth
- 2 tbsp Tomato paste concentrated three times
- 30 g Butter
- 30 g Flour
- 4 tbsp Lemon juice
- 1 pinch Sugar
- 1 tbsp Olive oil
- Salt, pepper from the mill
- Sweet paprika powder
- Hot paprika powder
- Chilli from the mill
- Peel the onion and garlic and cut into small cubes. Wash, halve and slice the leek. Peel the carrots and cut into slices.
- Cook the noodles in boiling salted water until they are firm to the bite.
- Melt the butter in a saucepan, add the flour and sweat for about 1 minute while stirring. Deglaze with the milk and stock and let it boil down. Remove from heat and stir in lemon juice. Season with salt, pepper from the mill and a pinch of sugar.
- Heat the oil in a pan and fry the onions with the garlic until translucent. Add the vegetables and cook for about 5 minutes. Now add the minced meat, stir in the tomato paste and fry well. Season with salt, pepper from the mill, hot paprika, sweet paprika and chilli from the mill.
- Put 1 / 3 of the lemon roux in an ovenproof baking dish and spread 1/3 of the minced vegetable mixture on top. Now turn the noodles into nests and place them on top of the minced vegetable mixture. Spread the rest of the minced vegetables on the nests and pour the rest of the lemon roux in between. Bake in a preheated oven at 180 ° C for about 20 minutes, depending on the browning.
