Vegetarian: Pumpkin Cakes with Goji Berries

The perfect vegetarian: pumpkin cakes with goji berries recipe with a picture and simple step-by-step instructions.

  • 80 g Goji berries
  • 500 g Pumpkin
  • 125 g Flour
  • 2 Eggs
  • Salt
  • Sugar
  • Cinammon
  • Oil for frying
  1. Soak the goji berries in water for an hour and drain. Cut the pumpkin into cubes and cook in 500 ml of water with a little salt. Pouring off.
  2. Let the pumpkin puree cool then add the eggs, flour and finally the berries. Mix everything together and season with sugar and salt.
  3. Let a pan with oil get hot, then cut off some of the dough with a tablespoon and flatten a little in the pan. Then fry and drain on kitchen paper. Serve with sugar or cinnamon sugar. Depending on your taste.
